Perfect braising balance — an ideal mix of muscle, collagen, and intramuscular fat that melts into silky jus during low-and-slow cooking. Hand-trimmed whole roast — shaped from the flavorful shoulder clod; excess surface fat and sinew removed, but plenty left to baste the meat from within. No antibiotics or added hormones — just grass, fresh water, and sunshine. Vacuum-sealed freshness — one solid 3-lb piece, ready for the Dutch oven, smoker, or slow cooker.
